We present a simplified interpretation of a cocktail from our latest drinks list. Designed as a party-sized prepared mix which is bursting with flavours of the festive period, which makes it ideal for your festive gathering. Any leftover citrus syrup for brunch beverages, puddings, or for another batch of this cocktail.

Serves 10 people
To make the Citrus Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
For the Premix (yields 850ml, to serve 10)
400ml decent vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch
Directions
Making the Cordial: Place all the items in a saucepan, bring to a simmer, stirring so the sugar melts. After that, take off the stove allowing it to cool completely. Decant to a clean bottle, close it and refrigerate it in the fridge, it can be stored for about one month.
To make Premix: Mix all the spirits and syrup into a sizeable container, allow it to infuse for 60 minutes, then pass it through preferably using a fine cloth, to ensure it's perfectly clear.
For serving: Pour 85ml of your batch mix into a mixing glass packed with ice, and stir lightly for one minute to chill. Strain to a frosted cocktail glass or a similar vessel, garnish with some cranberries adding the final touch using a quick spritz with the mandarin essence above the glass.
